Ingredients

  • 1 lb chicken breast, cut into 1-inch cubes
  • ⅓ cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sambal oelek or chili paste
  • ½ whole fresh lime
  • 2 whole garlic cloves, minced

Instructions

    Whisk peanut butter, soy sauce, sambal, juice from half a lime, and minced garlic in a small bowl until smooth.

    Heat 2 tbsp oil in a skillet over medium-high until it shimmers, about 90 seconds.

    Add chicken and cook, stirring occasionally, until no pink remains, about 7 minutes.

    Pour the peanut glaze over the chicken and toss to coat evenly.

    Cook for 1 minute, stirring constantly, until the glaze clings to each piece and looks glossy.
