Ingredients
- 1.5 lb chicken breast
- ½ cup peanut butter
- ¾ cup coconut milk
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 whole lime
- ½ head purple cabbage
- 8 whole wooden skewers

Soak 8 wooden skewers in water for 20 minutes. Meanwhile, slice 1.5 lb chicken breast into thin strips and thread onto the skewers.

In a small bowl, whisk together 0.5 cup peanut butter, 0.75 cup coconut milk, 3 tbsp soy sauce, and 2 tbsp brown sugar until smooth. Set aside.

Heat a grill or grill pan over medium-high. Grill the chicken skewers for 4-5 minutes per side, until charred at the edges and cooked through (no pink inside).

While the chicken cooks, thinly shred 0.5 head of purple cabbage and place in a bowl. Squeeze the juice of 1 lime over it and toss to combine.

Serve the hot skewers with the peanut sauce drizzled on top and the lime cabbage on the side. Add extra lime or chili flakes if you like.
