Ingredients
- 1.5 lb chicken breast
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp lime juice
- ½ cup peanut butter
- ½ cup coconut milk
- 2 cloves garlic
- 12 wooden skewers

Soak 12 wooden skewers in water for 30 minutes. Cut 1.5 lb chicken breast into 1-inch cubes and place in a bowl.

In a small bowl, mix 3 tbsp soy sauce, 2 tbsp brown sugar, 2 tbsp lime juice, and 2 minced garlic cloves. Pour over chicken, toss to coat, and let marinate for 15 minutes.

While chicken marinates, make the sauce: in a saucepan over medium heat, combine 1/2 cup peanut butter and 1/2 cup coconut milk. Stir until smooth and warm, about 5 minutes. Add a splash of water if too thick.

Thread marinated chicken onto skewers, about 4-5 pieces each. Discard leftover marinade.

Grill skewers over medium-hot charcoal (or a grill pan) for 8-10 minutes, turning occasionally, until chicken is charred at the edges and cooked through (no pink inside).
