Ingredients
- 1.5 lb chicken breast
- 3 tbsp soy sauce
- ½ cup peanut butter
- 2 tbsp brown sugar
- 1 lime
- 2 cloves garlic
- 1 tsp chili flakes
- 1 orange

Cut the 1.5 lb chicken breast into 1-inch cubes. In a bowl, mix 2 tbsp soy sauce, 1 minced garlic clove, and 1 tbsp brown sugar. Add chicken and toss to coat. Let marinate for 10 minutes.

While chicken marinates, make the sauce: in a small saucepan, combine 1/2 cup peanut butter, 1 tbsp soy sauce, 1 tbsp brown sugar, 1 tsp chili flakes, 1 minced garlic clove, and juice of 1 lime. Add 1/4 cup water and whisk over medium heat until smooth and bubbling, about 3 minutes. Set aside.

Thread the marinated chicken onto skewers, about 4-5 pieces per skewer. Preheat a grill or grill pan over medium-high heat.

Grill the skewers for 4-5 minutes per side, turning once, until the chicken is charred at the edges and cooked through (no pink inside).

Slice the orange into wedges and halve the tomatoes. Serve the hot skewers with the peanut sauce on the side, garnished with orange wedges and tomatoes.
