Ingredients

  • 1 lb pork shoulder
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 cup pineapple chunks
  • 1 medium red onion
  • ½ cup cilantro

Instructions

    Cut the 1 lb pork shoulder into 1-inch cubes. In a bowl, mix the 3 tbsp soy sauce and 2 tbsp brown sugar; toss the pork to coat. Let sit for 10 minutes.

    Thread the pork onto skewers, about 4-5 pieces each. Preheat a grill or grill pan over medium-high heat.

    Grill the skewers for 8-10 minutes, turning occasionally, until charred at the edges and cooked through (no pink inside).

    Meanwhile, chop the 1 cup pineapple chunks and 1 medium red onion into small pieces; mix together in a bowl to make a quick relish.
