Ingredients

  • 1.5 lb pork shoulder
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 4 cloves garlic
  • 1 tbsp fish sauce
  • ½ cup coconut milk
  • 1 tsp black pepper

Instructions

  1. 1

Slice the 1.5 lb pork shoulder into thin strips, about 1/4-inch thick, and place in a large bowl.

  2. 2

In a small bowl, mix 3 tbsp soy sauce, 2 tbsp brown sugar, 4 minced garlic cloves, 1 tbsp fish sauce, 1/2 cup coconut milk, and 1 tsp black pepper until the sugar dissolves.

  3. 3

Pour the marinade over the pork and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

  4. 4

Soak 8-10 wooden skewers in water for 30 minutes to prevent burning.

  5. 5

Thread the marinated pork onto the skewers, folding each strip accordion-style so it stays flat.

  6. 6

Preheat a grill or grill pan to medium-high heat. Grill the skewers for 3-4 minutes per side, until charred at the edges and cooked through, about 8 minutes total.

  7. 7

Serve hot with steamed rice and a side of cucumber salad if desired.
