Ingredients
- 8 fish (about 1.5 lbs total) fresh sardines, whole and gutted
- 2 tbsp olive oil
- 1 tsp coarse sea salt
- ¼ tsp black pepper
- 1.5 whole (cut into wedges) lemon
- 2 tbsp fresh parsley, chopped

Pat sardines dry inside and out with paper towels. Place on a plate and drizzle with olive oil.

Season generously inside and out with coarse salt and black pepper. Heat a grill or grill pan over high heat until very hot.

Lay sardines on the hot grill and cook 3–4 minutes per side without moving. Skin should char and flesh should flake easily.

Slide sardines onto a warm plate. Squeeze lemon wedges over the top and scatter parsley across.

Serve immediately with extra lemon wedges on the side.
