Ingredients
- 8 whole fresh sardines, gutted and cleaned
- 1 tbsp coarse sea salt
- 2 tbsp olive oil
- 1 whole lemon
- ¼ tsp black pepper

Pat sardines dry with paper towels. Brush both sides lightly with olive oil.

Heat a grill or cast-iron skillet over medium-high until it smokes lightly, ~3 minutes.

Sprinkle coarse salt and black pepper on the fish. Place sardines on the hot grill skin-side down.

Grill 3–4 minutes until skin is charred and crispy. Flip carefully and cook 2–3 minutes more.

Transfer to a plate. Halve the lemon and squeeze generously over the sardines.

Serve immediately while the fish is still steaming.
