Grilled Sardines with Coarse Salt & Lemon

Ingredients
- 6 pieces Fresh whole sardines, cleaned and gutted
- 2 tbsp Olive oil
- 1 tsp Coarse sea salt
- 1 whole Lemon
- ¼ tsp Black pepper

Pat sardines dry inside and out with paper towels. Brush both sides lightly with olive oil.

Heat a grill or grill pan to high heat until it just starts to smoke, about 3 minutes.

Lay sardines perpendicular to grill grates. Cook 3–4 minutes without moving until skin chars and crisps.

Flip carefully and grill the other side 2–3 minutes until flesh is opaque and skin blisters.

Transfer to a warm plate. Sprinkle with coarse sea salt and black pepper while still hot.

Cut lemon into wedges and serve alongside. Squeeze over sardines just before eating.
