Grilled Sardines with Lemon & Potatoes

Ingredients
- 6 count fresh whole sardines, gutted and cleaned
- 1 lb baby potatoes
- 3 cups mixed salad greens
- 2 count lemon
- 2 tsp coarse sea salt
- 3 tbsp olive oil

Boil potatoes in salted water until fork-tender, about 12 minutes. Drain and set aside.

Pat sardines dry with paper towels. Drizzle lightly with olive oil and season inside and out with coarse salt and black pepper.

Heat a grill pan or outdoor grill to medium-high until you can hold your hand 2 inches above it for only 2 seconds.

Grill sardines 2–3 minutes per side without moving them. Skin should char and blister; flesh will flake when pressed gently.

Toss salad greens with juice from half a lemon, remaining olive oil, salt, and pepper. Arrange on plates.

Serve grilled sardines and warm potatoes alongside salad. Squeeze fresh lemon wedges over everything.
