Ingredients
- 2 fish (1–1.5 lb each) whole tsipura (sea bream), gutted and scaled
- 3 tbsp olive oil
- 2 whole lemon
- 4 sprigs fresh oregano or thyme sprigs
- 3 cloves, lightly crushed garlic cloves
- 1 to taste sea salt and black pepper

Pat the fish dry inside and out with paper towels. Stuff each cavity with lemon slices, herb sprigs, and crushed garlic.

Rub the exterior generously with olive oil, then season all over with salt and black pepper.

Heat a grill or grill pan over medium-high until a drop of water sizzles on contact, about 2 minutes.

Lay the fish on the grill without moving. Cook 7–8 minutes until the skin is charred and crispy.

Flip gently and cook the other side 6–7 minutes until the flesh flakes at the thickest point near the spine.

Transfer to a plate, squeeze fresh lemon juice over the top, and drizzle with best-quality olive oil. Serve immediately.
