Ingredients

  • 4 6 oz each salmon fillets
  • 2 peeled and diced kiwi
  • 1 cup blueberries
  • 1 cup, halved cherry tomatoes
  • 2 cloves, minced garlic
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. 1

Pat the 4 salmon fillets dry and season both sides with 1 tsp salt and 0.5 tsp black pepper.

  2. 2

Heat 1 tbsp olive oil in a large skillet over medium-high. Place the salmon skin-side down and cook until the skin is crispy and golden, about 4-5 minutes.

  3. 3

Flip the salmon and add the 2 minced garlic cloves to the pan. Cook for another 3-4 minutes until the salmon is opaque and flakes easily with a fork. Remove salmon to a plate.

  4. 4

In a bowl, combine the 2 diced kiwi, 1 cup blueberries, and 1 cup halved cherry tomatoes. Drizzle with the remaining 1 tbsp olive oil and toss gently.

  5. 5

Serve the salmon topped with the fresh kiwi and berry salsa. Enjoy immediately.

  6. 6

Optional: add a squeeze of lime or a pinch of chili flakes to the salsa for extra zing.
