Ingredients
- 4 6 oz each salmon fillets
- 2 peeled and diced kiwi
- 1 cup blueberries
- 1 cup, halved cherry tomatoes
- 2 cloves, minced garlic
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Pat the 4 salmon fillets dry and season both sides with 1 tsp salt and 0.5 tsp black pepper.

Heat 1 tbsp olive oil in a large skillet over medium-high. Place the salmon skin-side down and cook until the skin is crispy and golden, about 4-5 minutes.

Flip the salmon and add the 2 minced garlic cloves to the pan. Cook for another 3-4 minutes until the salmon is opaque and flakes easily with a fork. Remove salmon to a plate.

In a bowl, combine the 2 diced kiwi, 1 cup blueberries, and 1 cup halved cherry tomatoes. Drizzle with the remaining 1 tbsp olive oil and toss gently.
