Ingredients
- 4 cups lettuce
- 2 eggs
- 7 oz tofu
- ½ cup edamame
- 2 tbsp soy sauce
- 1 tbsp sesame oil

Bring a small pot of water to a boil, then gently lower in the 2 eggs and cook for 6-7 minutes for soft-boiled. Transfer to ice water, peel, and set aside.

Cut the 7 oz tofu into sticks and pat dry. Heat 2 tbsp oil in a skillet over medium-high; fry tofu until golden and crisp on all sides, about 6-8 minutes. Drain on paper towels.

In a small bowl, whisk together the 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tsp sugar (if you have it) for the dressing.

Toss the 4 cups lettuce and 0.5 cup edamame with the dressing. Top with the fried tofu and halved eggs. Sprinkle with sesame seeds and chili slices if you like.
