25-Min Rosół — Polish Chicken Noodle Soup

Ingredients

  • 1 whole (shredded) rotisserie chicken
  • 8 cups chicken broth
  • 2 cups (dry) egg noodles
  • 1 can (14 oz) canned crushed tomatoes
  • 1 medium carrot, peeled
  • 3 tbsp fresh parsley or dill, chopped

Instructions

    Bring broth to a boil in a large pot over medium-high heat.

    Slice carrot into thin rounds and add to boiling broth with tomatoes.

    Add noodles and simmer until tender, about 8 minutes, stirring occasionally.

    Shred rotisserie chicken and stir into soup with salt and pepper to taste.

    Heat through for 2 minutes, then ladle into bowls and top with fresh herbs.
