Ingredients

  • 6 cups chicken broth
  • 1.5 cups rotisserie chicken, shredded
  • 8 oz egg noodles
  • 1 medium carrot, sliced thin
  • 3 tbsp fresh parsley (or dill), chopped
  • 1 to taste salt and black pepper to taste

Instructions

    Bring broth to a boil in a large pot over medium-high heat.

    Add sliced carrot and noodles, then stir to separate the noodles.

    Simmer for 6–8 minutes until noodles are tender and carrot softens.

    Stir in shredded rotisserie chicken and parsley; heat through for 1 minute.
