Ingredients
- 1 large sweet potato
- 2 medium potato
- 1 cup brussels sprouts
- 1 head broccoli
- 2 medium carrot
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.

Peel and chop the 1 large sweet potato and 2 medium potatoes into 1-inch cubes. Trim and halve the 1 cup Brussels sprouts.

Cut the 1 head of broccoli into small florets and peel and slice the 2 medium carrots into 1/2-inch rounds.

In a large bowl, toss all the prepared vegetables with the 3 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper until evenly coated.

Spread the vegetables in a single layer on the prepared sheet pan. Roast for 25-30 minutes, stirring halfway, until the vegetables are tender and browned at the edges.
