Ingredients
- 1.5 lb pork belly slices
- 4 cups broccoli florets
- 1 medium red onion
- 3 cloves garlic cloves
- 2 tbsp olive oil
- 1 tsp salt

Preheat oven to 425°F. Pat the 1.5 lb pork belly slices dry with paper towels and season both sides with 1 tsp salt and black pepper.

In a large bowl, toss the 4 cups broccoli florets and 1 sliced red onion with 2 tbsp olive oil and 3 minced garlic cloves. Spread on a rimmed baking sheet.

Place the pork belly slices on top of the vegetables. Roast for 20-25 minutes, until the pork is browned and crispy and the broccoli is tender with charred edges.
