- 12 oz Brussels sprouts

- 1 whole lemon

Preheat oven to 425°F. Trim 12 oz Brussels sprouts and halve them. Toss with 1 tbsp olive oil, salt, and pepper on a baking sheet.

Roast sprouts for 10 minutes, then push to one side. Season 4 lamb chops with salt and pepper and place on the empty side. Roast until sprouts are browned and lamb is medium-rare, about 8-10 minutes more.
