Ingredients
- 2 whole garlic heads
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper

Preheat the oven to 400°F (200°C). Cut the top off each of the 2 garlic heads to expose the cloves, about 1/4 inch down.

Place each garlic head on a piece of aluminum foil large enough to wrap it completely. Drizzle each with 1 tablespoon olive oil, then sprinkle with 1/4 teaspoon salt and a pinch of black pepper.

Wrap the foil tightly around each garlic head, sealing the edges to create a packet. Place both packets on a baking sheet.

Roast for 35-40 minutes, until the garlic is very soft and fragrant—squeeze a packet gently; it should yield easily and the cloves should look golden and caramelized.

Remove from the oven and let cool for 5 minutes. Unwrap carefully to avoid steam, then squeeze the soft roasted cloves out of their skins into a bowl.

Mash the cloves with a fork if desired, or serve whole. Enjoy warm or at room temperature.
