Ingredients

  • 1.5 lb broccoli florets
  • 2 tbsp olive oil
  • 1 tbsp sesame seeds
  • ¼ cup slivered almonds
  • ½ cup plain yogurt
  • ½ cup microgreens

    Preheat oven to 425°F. Toss 1.5 lb broccoli florets with 2 tbsp olive oil, salt, and pepper on a baking sheet. Spread in a single layer.

    Roast for 15-18 minutes, until edges are browned and stems are tender when pierced with a fork.

    Meanwhile, toast 1 tbsp sesame seeds and 1/4 cup slivered almonds in a dry skillet over medium heat, stirring often, until golden and fragrant, about 3 minutes.

    In a small bowl, mix 1/2 cup plain yogurt with a pinch of salt and pepper. Drizzle over the roasted broccoli.
