Ingredients

  • 1 lb pork tenderloin
  • ½ cup breadcrumbs
  • 2 medium sweet potatoes
  • 4 cups mixed greens
  • ½ medium red onion
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

    Preheat oven to 400°F. Peel and chop 2 sweet potatoes into 1-inch cubes. Toss with 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp pepper on a baking sheet.

    Roast sweet potatoes for 20-25 minutes until fork-tender. Meanwhile, season 1 lb pork tenderloin with remaining salt and pepper, then press 0.5 cup breadcrumbs onto all sides.

    Heat 1 tbsp olive oil in an oven-safe skillet over medium-high. Sear pork for 2-3 minutes per side until golden brown.

    Transfer skillet to oven and roast for 15-20 minutes until internal temperature reaches 145°F. Rest pork for 5 minutes before slicing.

    Mash roasted sweet potatoes with 1 tbsp olive oil until smooth. Season with salt to taste.

    In a bowl, toss 4 cups mixed greens with thinly sliced red onion, remaining 1 tbsp olive oil, and a pinch of salt and pepper.
