Ingredients

  • 2 whole lamb shank
  • 3 medium, chopped carrots
  • 2 medium, chopped tomatoes
  • 1 cup frozen peas
  • 1 can (15 oz), drained canned white beans
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 to taste salt and pepper

    Preheat oven to 375°F. Pat the 2 lamb shanks dry and season generously with salt and pepper.

    Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high. Sear the lamb shanks until browned on all sides, about 6-8 minutes total.

    Add the 3 chopped carrots, 2 chopped tomatoes, 1 cup frozen peas, and 1 can drained white beans to the skillet. Sprinkle with 1 tsp dried thyme and stir to combine.

    Transfer the skillet to the oven. Roast uncovered until the lamb is tender and pulls easily from the bone, about 40-45 minutes.

    Remove from oven and let rest for 5 minutes. Serve the lamb shanks with the vegetables and beans spooned over the top.
