Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium zucchini
  • 2 medium tomatoes
  • ½ cup rice
  • 6 cups chicken broth
  • 1 inch ginger

Instructions

    In a bowl, mix the 1 lb ground beef with 1/4 cup finely chopped onion, 1 minced garlic clove, and a pinch of salt and pepper. Roll into 1-inch meatballs.

    Heat 1 tbsp olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove and set aside.

    In the same pot, add the remaining chopped onion, 1 minced garlic clove, and 1 inch grated ginger. Cook until fragrant, about 2 minutes.

    Add the 2 chopped tomatoes and 1 diced zucchini. Cook for 3 minutes until slightly softened.

    Pour in the 6 cups chicken broth and 1/2 cup rice. Bring to a boil, then reduce heat to low. Simmer for 15 minutes.

    Return the meatballs to the pot. Cook for another 10 minutes, until the rice is tender and the meatballs are cooked through.

    Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
