Red Onion Soup

Ingredients

  • 4 medium red onions
  • 6 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

    Peel and thinly slice the 4 red onions. Heat the 2 tbsp olive oil in a large pot over medium heat.

    Add the sliced onions to the pot. Cook, stirring occasionally, until they are soft and translucent, about 8-10 minutes.

    Pour in the 6 cups water and add the 1 tsp salt and 1/2 tsp black pepper. Stir well.

    Bring the soup to a boil, then reduce heat to low. Simmer uncovered until the onions are very tender and the broth is slightly pink, about 20 minutes.

    Taste and adjust seasoning with more salt or pepper if needed. Serve hot, optionally garnished with fresh herbs if you have them.
