Ingredients

  • ¾ lb beef chuck, cut into 1-inch cubes
  • 3 medium shallot, sliced
  • 4 clove garlic cloves, minced
  • 2 tbsp kluwek (black nut) paste or jarred kluwek purée
  • 4 cup beef broth
  • 1 tsp palm sugar or brown sugar

Instructions

    Heat oil in a large pot over medium-high. Add shallots and garlic, cook until fragrant, about 90 seconds.

    Add beef cubes and brown on all sides, stirring occasionally, for 4–5 minutes.

    Stir in kluwek paste until well combined, coating the beef.

    Pour in beef broth and add palm sugar. Bring to a simmer.

    Simmer for 10–12 minutes until beef is tender and broth turns dark and rich.

    Taste and season with salt and pepper. Serve in bowls with rice, krupuk, sambal, soft-boiled egg, bean sprouts, and lime wedge.
