- 12 whole fresh oysters
- 2 cups ice
- 1 whole lemon
- ¼ cup fresh dill

Scrub the 12 oysters under cold running water to remove any grit or sand. Discard any that are already open and don't close when tapped.

Hold each oyster with a towel, flat side up. Insert an oyster knife near the hinge, twist to pop the shell, and slide the blade along the top to release the meat.

Detach the oyster from the bottom shell with the knife, being careful not to spill the liquor. Arrange all oysters on a platter filled with the 2 cups ice.

Zest the 1 lemon over the oysters, then cut it into wedges. Sprinkle the 0.25 cup chopped dill over the top.

Serve immediately with lemon wedges on the side. Enjoy raw, or add a drop of hot sauce if you like.
