Rabri

A rich, creamy Indian dessert made by slowly simmering milk until it thickens, sweetened with sugar and finished with a touch of ghee. This quick version captures the essence of traditional rabri in about 20 minutes.

Ingredients

  • 4 cups whole milk
  • 3 tbsp sugar
  • 1 tsp ghee

Instructions

    Pour the 4 cups whole milk into a heavy-bottomed pan and bring to a boil over medium-high heat, stirring often, about 5 minutes.

    Reduce heat to medium-low and simmer, stirring frequently, until the milk reduces by half and thickens slightly, about 15 minutes. The milk should coat the back of a spoon.

    Stir in the 3 tbsp sugar and 1 tsp ghee, mixing until the sugar dissolves completely, about 1 minute. The rabri should be thick and creamy.

    Serve warm or chilled, garnished with a pinch of cardamom or chopped nuts if you like.
