  • 1 cup cooked quinoa
  • 1 medium, diced tomato
  • ¼ cup, finely chopped red onion
  • ½ cup, chopped fresh parsley
  • 2 cups mixed greens
  • 1 cup plantain chips

    In a large bowl, combine 1 cup cooked quinoa, 1 diced tomato, 1/4 cup chopped red onion, and 1/2 cup chopped parsley. Toss to mix.

    In a small bowl, whisk 2 tbsp olive oil, 2 tbsp lemon juice, and a pinch of salt and pepper. Pour over the quinoa mixture and stir well.
