Ingredients
- 6 pieces frozen tamales (cheese & rajas or your choice)
- 2 cups whole milk
- ¼ cup masa harina (corn flour)
- 3 oz Mexican chocolate (tablets or chopped)
- 1 tbsp honey
- 1 piece cinnamon stick
Instructions
- 1
Arrange tamales (still in husks) in a steamer basket over simmering water. Steam for 8–10 minutes until heated through.
- 2
While tamales steam, whisk masa harina with 0.5 cup cold water until smooth, breaking up lumps.
- 3
Heat milk with cinnamon stick in a saucepan over medium until steaming. Do not boil.
- 4
Slowly pour masa mixture into hot milk, whisking constantly to prevent lumps. Cook 2 minutes until thickened.
- 5
Add chocolate and honey. Stir until chocolate melts and atole is creamy, about 2 minutes. Remove cinnamon stick.
- 6
Unwrap tamales and arrange on plates. Pour atole into mugs or bowls. Serve immediately alongside tamales.
