  • 2 cups cooked rice (white, brown, or jasmine)
  • 2 cups shredded coleslaw mix or green cabbage
  • ½ cup barbecue sauce
  • 3 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar or lime juice

    Divide the cooked rice evenly between two bowls, placing about 1 cup in the center of each bowl.

    Scoop 0.75 pounds of pulled pork onto each bowl, placing it on top of the rice in a mound to one side.

    Pour 0.25 cup of barbecue sauce over the pork on each bowl, letting some drip onto the rice.

    In a small bowl, whisk together 3 tablespoons mayonnaise and 1 tablespoon apple cider vinegar until smooth and creamy, about 20 seconds.

    Add 2 cups shredded coleslaw mix to the creamy dressing and stir with a spoon until every strand of cabbage is coated, about 30 seconds.
