Ingredients
- 1.5 lbs pork belly, skin-on, 1.5 lbs
- 1 cup cooked white rice
- 1 medium yellow onion, finely diced
- ¾ cup frozen peas
- 1 tsp cumin
- 1 whole lime (juiced)
- ¼ cup cilantro, chopped

Heat oil in a large skillet over medium-high until shimmering, ~2 minutes.

Mix rice, onion, peas, cumin, lime juice, and cilantro in a bowl. Season with salt and pepper.

Carefully cut a pocket into the thickest side of the pork belly, leaving 1/2-inch edges. Stuff firmly with rice mixture.

Sear pork skin-side down 3–4 minutes until golden and skin crisps, without moving.

Flip, then sear the meat side 2 minutes until golden. Season all sides with salt and pepper.

Transfer skillet to a 425°F oven. Roast 12–15 minutes until internal temp hits 160°F. Rest 3 minutes, slice, and serve.
