Ingredients

  • 8 sheets phyllo dough
  • 1.5 cups cottage cheese
  • ¼ cup granulated sugar
  • 6 tbsp butter, melted
  • 1 whole (zested) lemon
  • ½ tsp ground cinnamon
  • ¼ cup raisins (optional)

Instructions

    Preheat oven to 375°F. Mix cottage cheese, sugar, lemon zest, cinnamon, and raisins in a bowl until combined.

    Lay a phyllo sheet on a clean surface. Brush lightly with melted butter. Repeat with 3 more sheets, brushing each.

    Spread half the cottage cheese mixture along one short edge of the phyllo stack, leaving a 1-inch border.

    Roll tightly into a log, tucking in the sides as you go. Transfer seam-side down to a parchment-lined sheet pan.

    Repeat steps 2–4 with remaining phyllo sheets and filling to make a second roll.
