Ingredients

  • 3 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp granulated sugar
  • 2 tbsp neutral cooking oil
  • ½ whole red chili (optional, sliced)

Instructions

    Slice bitter melon lengthwise, scoop out seeds with a spoon, then slice crosswise into 1/4-inch half-moons.

    Heat oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

    Add bitter melon and cook, stirring often, until edges soften and char slightly, 5-6 minutes.

    Add garlic and chili (if using), stir constantly for 30 seconds until fragrant.

    Pour in fish sauce and sugar, toss to coat, and cook another 90 seconds until glossy and caramelized.
