Ingredients
- 6 large eggs
- 4 oz prosciutto, torn into bite-size pieces
- ¾ cup sharp cheddar or gruyère, shredded
- ¼ cup heavy cream
- 1 tbsp fresh thyme or chives, chopped
- 1 tbsp butter

Preheat oven to 400°F. Whisk eggs with cream, a pinch of salt, and black pepper until smooth.

Melt butter in a 10-inch cast iron or nonstick skillet over medium heat, ~60 seconds.

Scatter prosciutto and cheese evenly across the skillet. Pour egg mixture over the top.

Cook on stovetop for 2 minutes without stirring until edges just start to set.

Transfer skillet to oven and bake until top is golden and center jiggles slightly, ~8 minutes.
