Ingredients
- 4 medium potatoes
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Scrub the 4 potatoes and cut them into 1/2 inch cubes. No need to peel if the skins are thin.

Heat the 3 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
