Ingredients

  • 4 medium potatoes
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Scrub the 4 potatoes and cut them into 1/2 inch cubes. No need to peel if the skins are thin.

    Heat the 3 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

    Add the potato cubes in a single layer. Cook undisturbed for 5 minutes until the bottoms are golden brown.

    Stir and continue cooking, stirring occasionally, until potatoes are golden and tender when pierced with a fork, about 10-12 minutes more.

    Season with the 1/2 tsp salt and 1/4 tsp black pepper. Toss to coat and serve hot.
