Ingredients

  • 4 medium potatoes
  • 1 large onion
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp fresh thyme
  • 1 leaf bay leaf

Instructions

    Preheat oven to 400°F. Grease a 9-inch baking dish with 1 tbsp butter. Thinly slice the 4 potatoes and 1 onion (about 1/8 inch thick).

    Layer half the potatoes in the dish, then half the onion. Sprinkle with half the thyme and season with salt and pepper. Repeat with remaining potatoes, onion, and thyme.

    Pour 1 cup heavy cream over the layers. Tuck the bay leaf into the cream. Dot the top with the remaining 1 tbsp butter.

    Bake uncovered for 25-30 minutes, until the potatoes are tender when pierced with a knife and the top is golden and bubbling.

    Let rest for 5 minutes before serving. Remove the bay leaf before eating.
