Ingredients
- 1 pound potato gnocchi
- 5 ounces fresh spinach
- 3 tablespoons butter
- 2 cloves garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- 1
Bring a large pot of salted water to a boil. Add the 1 pound gnocchi and cook until they float to the surface, about 2-3 minutes. Reserve 1/2 cup of the pasta water, then drain the gnocchi.
- 2
In a large skillet, melt the 3 tablespoons butter over medium heat. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly.
- 3
Add the 5 ounces spinach to the skillet and cook until wilted, about 2 minutes, tossing with tongs. Season with the 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- 4
Add the cooked gnocchi to the skillet and toss gently to coat with the butter and spinach. If the mixture seems dry, add a splash of the reserved pasta water to create a light sauce.
- 5
Serve immediately, garnished with extra black pepper or grated Parmesan if desired.
