Ingredients
- 1.5 lb potatoes
- 1 head broccoli
- 1 medium onion
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 375°F. Grease a 9x13 inch baking dish with 1 tbsp olive oil.

Thinly slice the 1.5 lb potatoes and 1 medium onion. Cut the 1 head of broccoli into small florets.

Layer half the potatoes in the dish, then half the onion and broccoli. Sprinkle with 1/2 tsp salt and 1/4 tsp pepper.

Repeat with remaining potatoes, onion, and broccoli. Season with remaining salt and pepper.

Pour 1 cup heavy cream evenly over the top. Sprinkle 2 cups shredded cheddar cheese over everything.

Cover with foil and bake for 30 minutes. Remove foil and bake until potatoes are tender and top is golden, about 15 more minutes.
