Ingredients
- ½ lb ground pork
- ¾ cup ricotta cheese
- 1 cup whole milk mozzarella, shredded
- 1 ball store-bought pizza dough (1 lb ball)
- ½ tsp red pepper flakes
- ¼ cup parmesan cheese, grated
- ½ cup marinara sauce (for dipping)

Brown ground pork in a large skillet over medium-high heat, breaking it up with a spoon, until no pink remains, about 5 minutes. Drain excess fat.

Stir ricotta, mozzarella, parmesan, red pepper flakes, salt, and pepper into the pork. Cook until cheese softens, about 1 minute. Remove from heat and let cool.

Divide dough in half. On a floured surface, roll each piece into a 6-inch round about 1/4-inch thick.

Spoon half the pork-cheese filling onto one half of each dough circle, leaving a 1/2-inch border. Fold dough over to form a half-moon and press edges firmly to seal.

Wipe out the skillet, add 2 tbsp olive oil, and heat over medium until it shimmers. Slide both calzones into the pan.

Pan-fry 4-5 minutes per side until deep golden brown and crispy. Serve immediately with warm marinara for dipping.
