Ingredients
- 8 oz pork sausage
- 8 large eggs
- 1 cup cherry tomatoes
- ¾ cup cheddar or mozzarella cheese, shredded
- ¼ cup sour cream
- 2 tbsp fresh basil or parsley, chopped
- ½ medium yellow onion, diced

Heat a 10-inch skillet over medium-high. Brown the sausage, breaking it into crumbles as it cooks, until no pink remains, about 5 minutes.

Add the diced onion to the pan and cook, stirring, until softened and starting to brown, about 2 minutes.

Scatter the cherry tomatoes across the pan. Whisk the eggs with salt and pepper, then pour them over the sausage and tomatoes.

Cook undisturbed over medium-high heat for 4–5 minutes until the edges are set but the center still jiggles slightly.

Sprinkle the cheese evenly over the top. Reduce heat to medium and cook until the cheese melts and the center is just set, 2–3 minutes.

Slide onto a cutting board. Top with dollops of sour cream and scatter fresh herbs. Slice into wedges and serve immediately.
