Ingredients

  • ½ lb ground pork
  • 4 cups chicken or pork broth
  • 1.5 tbsp fish sauce
  • 6 oz dried rice noodles (banh hoa or tapioca noodles)
  • 4 oz mushrooms, sliced (any type)
  • 1 whole lime (juiced)
  • ¼ cup green onion, chopped

Instructions

    Heat a large pot or Dutch oven over medium-high. Add ground pork and cook, breaking up with a spoon, until no pink remains, ~5 minutes.

    Pour broth and fish sauce into the pot. Add mushroom slices. Bring to a boil, then reduce to a simmer.

    Add rice noodles to the simmering broth. Cook until tender, ~4 minutes, stirring occasionally so they don't clump.

    Squeeze lime juice into the pot. Taste and adjust salt or fish sauce if needed.
