Ingredients
- 1.5 lb pork belly, sliced 1/4-inch thick
- 8 leaves butter lettuce or iceberg lettuce leaves
- ½ cup ssamjang (Korean dipping sauce)
- 1 cup pickled radish (mu-chi), sliced thin
- 4 cloves garlic cloves, minced
- 1 tbsp gochugaru (Korean red chili flakes)

Bring a large pot of salted water to a boil. Add pork belly slices and simmer until cooked through and very tender, ~12 minutes.

While pork cooks, whisk ssamjang with minced garlic and gochugaru in a small bowl until blended.

Drain pork and transfer to a serving platter. Keep warm.

Arrange lettuce leaves, pickled radish, and spiced ssamjang on small plates or a large platter.

To eat, spread a small spoonful of sauce on a lettuce leaf, add a slice of pork and pickled radish, then roll and wrap.
