- 4 whole scallions
- ½ medium red onion
- 1 inch piece fresh ginger
- 3 tbsp soy sauce
- 1 tsp sesame seeds

Place the 1 lb chicken breast in a pot, cover with water, and bring to a boil over high heat. Reduce to low, cover, and simmer until cooked through, about 15 minutes. The chicken should feel firm and no longer pink inside.

While chicken cooks, thinly slice the 4 scallions and 0.5 red onion. Grate the 1 inch ginger. Set aside.

Remove chicken from pot, let cool slightly, then shred or slice. In a small bowl, mix the 3 tbsp soy sauce with the grated ginger.
