Ingredients
- 8 oz dried noodles
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 stalks green onions
- 6 cups water

Bring 6 cups water to a rolling boil in a large pot. Add 8 oz dried noodles and cook according to package directions until tender but still chewy, about 6-8 minutes.

Drain the noodles in a colander and rinse briefly with cold water to stop cooking and remove excess starch. Shake well to remove excess water.

In a large bowl, whisk together 2 tbsp soy sauce and 1 tbsp sesame oil. Add the drained noodles and toss until every strand is coated.

Thinly slice 2 green onions, using both white and green parts. Sprinkle over the noodles and toss once more. Serve warm or at room temperature.
