Ingredients
- 500 g mascarpone cheese
- 100 g powdered sugar
- 200 ml heavy cream
- 150 ml espresso or strong brewed coffee, cooled
- 24 pieces ladyfinger biscuits (savoiardi)
- 100 g roasted shelled pistachios
- 20 g dark chocolate, finely grated (optional garnish)

Whip heavy cream to stiff peaks in a medium bowl using an electric mixer or whisk.

In a separate bowl, beat mascarpone with powdered sugar until smooth and pale, ~2 minutes.

Fold whipped cream into mascarpone mixture in three additions until no white streaks remain.

Quickly dip each ladyfinger into cooled espresso (1–2 seconds per side) and layer in a 8-inch square dish.

Spread half the mascarpone cream over the ladyfingers, then repeat: dipped ladyfingers, then remaining cream.

Roughly chop pistachios and scatter over the top with grated chocolate. Chill at least 10 minutes before serving.
