Ingredients
- 1 cup pistachios
- 1 cup medjool dates, pitted
- ½ cup rolled oats
- 2 tbsp honey
- 1 tsp vanilla extract
- ¼ tsp salt

Pulse 1 cup pistachios in a food processor until finely chopped, about 10 seconds. Set aside 2 tbsp for rolling.

Add 1 cup pitted dates, 0.5 cup oats, 2 tbsp honey, 1 tsp vanilla, and 0.25 tsp salt to the processor. Blend until a sticky dough forms, about 1 minute.

If the mixture is too dry, add 1 tbsp water and pulse again. It should hold together when pinched.

Scoop out 1 tbsp portions and roll into balls with your hands, about 12 bites.

Roll each ball in the reserved chopped pistachios to coat evenly.
