Ingredients
- 1.5 lb chicken breast
- 2 cups pineapple chunks
- 3 tbsp tomato paste
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic
- 2 tbsp vegetable oil
- ½ tsp salt

Cut the 1.5 lb chicken breast into 1-inch pieces and season with the 0.5 tsp salt. Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat until shimmering.

Add the chicken in a single layer and cook without stirring until golden brown on the bottom, about 4 minutes. Flip and cook until cooked through, about 4 more minutes. Transfer to a plate.

Add the 2 cups pineapple chunks to the same skillet and cook over medium-high heat, stirring occasionally, until caramelized and slightly golden, about 3 minutes.

Mince the 2 garlic cloves and add to the skillet with the pineapple. Cook until fragrant, about 30 seconds.

In a small bowl, whisk together the 3 tbsp tomato paste, 2 tbsp soy sauce, 1 tbsp honey, and 0.25 cup water. Pour the sauce into the skillet and bring to a simmer.

Return the chicken to the skillet and stir to coat with the sauce. Cook until the sauce thickens and coats the chicken, about 2 minutes. Serve hot.
