Ingredients
- 4 cups beef broth
- 8 oz frozen or fresh beef meatballs (about 12)
- 3 oz dried rice noodles (thin)
- 2 whole star anise
- 3 slices fresh ginger, sliced thin
- 1 whole lime
- ½ cup fresh herbs (Thai basil, cilantro, or mint, chopped)

Bring broth, star anise, and ginger to a boil in a large pot over high heat, about 4 minutes.

Add meatballs, then reduce heat and simmer 6 minutes until they're heated through and broth is fragrant.

Meanwhile, cook rice noodles in boiling salted water until tender, about 4 minutes. Drain well.

Divide noodles between two bowls. Pour broth and meatballs over top, including star anise and ginger.

Squeeze half a lime over each bowl. Top with fresh herbs and serve immediately with lime wedges on the side.
