  • 8 oz frozen or fresh beef meatballs (about 12)
  • 3 oz dried rice noodles (thin)
  • 2 whole star anise
  • 3 slices fresh ginger, sliced thin
  • 1 whole lime
  • ½ cup fresh herbs (Thai basil, cilantro, or mint, chopped)

Instructions

  1. 1

Bring broth, star anise, and ginger to a boil in a large pot over high heat, about 4 minutes.

  2. 2

Add meatballs, then reduce heat and simmer 6 minutes until they're heated through and broth is fragrant.

  3. 3

Meanwhile, cook rice noodles in boiling salted water until tender, about 4 minutes. Drain well.

  4. 4

Divide noodles between two bowls. Pour broth and meatballs over top, including star anise and ginger.
