Ingredients
- 1 lb beef short ribs or chuck, cut into 2-inch chunks
- 6 cups beef broth
- 4 cloves garlic cloves, crushed
- 1 piece ginger, 2-inch piece, sliced
- 2 tbsp soy sauce
- 3 scallions scallions, chopped, plus sesame oil for finish

Bring broth to a boil in a large pot over high heat.

Add beef chunks, garlic, and ginger slices. Return to a boil, then reduce heat to medium.

Simmer uncovered for 12 minutes, skimming any foam that rises to the surface.

Stir in soy sauce and taste. Add salt and pepper as needed.
