Ingredients

  • 1 lb beef short ribs or chuck, cut into 2-inch chunks
  • 6 cups beef broth
  • 4 cloves garlic cloves, crushed
  • 1 piece ginger, 2-inch piece, sliced
  • 2 tbsp soy sauce
  • 3 scallions scallions, chopped, plus sesame oil for finish

Instructions

    Bring broth to a boil in a large pot over high heat.

    Add beef chunks, garlic, and ginger slices. Return to a boil, then reduce heat to medium.

    Simmer uncovered for 12 minutes, skimming any foam that rises to the surface.

    Stir in soy sauce and taste. Add salt and pepper as needed.

    Ladle into bowls. Top with scallions and drizzle with 1 tsp sesame oil per bowl.
