Ingredients

  • 4 cups beef broth
  • 8 oz frozen beef meatballs
  • 4 oz rice noodles, dried
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 3 slices fresh ginger, sliced thin
  • 1 cup fresh bean sprouts, herbs (cilantro, basil, mint)

Instructions

    Bring beef broth and sliced ginger to a boil in a large pot over high heat.

    Add frozen meatballs and stir occasionally until they float and are cooked through, ~4 minutes.

    Stir in soy sauce and fish sauce, tasting to adjust seasoning.

    While broth simmers, pour boiling water over rice noodles in a bowl and let sit until tender, ~3 minutes.

    Drain noodles and divide between 2 bowls, then ladle hot broth and meatballs over top.
